For subscription the Emails can not be changed, how ever you can always cancel the present subscription without any cancellation fee & buy another subscription with the required E-mail.
To update credit card details follow Manage your membership and payments | Creative Cloud
The photography CC can not be clubbed together but yes you can always buy the complete Cc or single app CC as per your convenience.
